Oh, hello gorgeous. So good to see you old friend. Yes….technicaly it’s still summer, but I’m a sucker for a good soup and I for one have missed it so it’s making a comeback at the Runnels’ house! Wow that was a long sentence, sorry ;)

And let me just say, the only thing that makes cream of broccoli soup better than it already is is roasting the broccoli first. It brings such a depth of flavor that is rich and hearty. And that lemon cream sauce?? Oh goodness….it reminds me that yes it truly is still summer, with a little zest that’s bright and cheery!

ingredients:

Soup
  • 2 heads broccoli, cut into florets
  • 3 tbsp coconut oil, melted
  • 6 strips uncured bacon
  • 1/2 white onion, roughly diced
  • 5 cups bone broth
  • 1/2 cup full fat coconut milk
  • 3 tsp garlic powder
  • 1/2-1 tsp sea salt to taste
Lemon Cream Sauce
  • 1/2 cup coconut cream
  • 1/2 tbsp lemon juice
  • 1/4 tsp sea salt
  • 1/4 tsp garlic powder

How to cook Roasted Cream of Broccoli Soup with Lemon Cream Sauce

For the Soup
  1. Preheat oven to 375.
  2. Toss broccoli with the coconut oil. Line a baking sheet with parchment paper, and spread the broccoli out across it.
  3. Place broccoli in the oven and roast for 20 minutes.
  4. While it’s roasting, cook the bacon in a large skillet. Remove the bacon and leave the rendered fat behind.
  5. To the rendered fat, add the onions and cook until soft.
  6. In a soup pot, add the bone broth, coconut milk, 3 strips of the cooked bacon, softened onion, broccoli and seasonings. Cover and cook over medium-high heat approximately 15 minutes.
  7. Use an immersion blender or standard blender to puree until smooth.
  8. Crumble the remaining bacon and top soup with it and lemon cream sauce upon serving.
For the Lemon Cream Sauce
  1. Combine all ingredients in a small sauce pan and cook over low-medium heat until well combined.
  2. Drizzle across soup upon serving.
