Just because it’s the most important meal of the day, doesn’t mean it has to be stuffy 🙌🏻

And if you can throw in some nutrient-dense veggies too, well then that’s just more reason to celebrate! I’m all about getting your greens in at each meal of the day, and this is a simple way to get it done. These Brussels Sprouts cook up with a great crisp that’s almost chip-like, so it kinda feels like like you’re cheating. Perfect for the kiddo’s!

Now let’s look at those sweet potatoes. Yep, they’re purple. And this little breakfast wasn’t gonna happen until I found these beauties at my local Sprouts Farmers Market! I don’t see them often so when I do, I snatch ‘em up right away. They’re more dense and woodsy than their orange counterpart, but still just sweet enough to play nicely with the savory notes of the sausage and Brussels sprouts.

And as for the sausage, it really couldn’t be more simple. Ground pork, a little maple syrup and some seasonings, and bingo….you got yourself some sausage! I like to prep a batch for the week and grab it as needed, whether with these sliders or alongside some avocado toast, it’s a great AIP substitute for the classic breakfast patty!

A fun, flavorful and filling AIP breakfast!

ingredients:

Sausage
  • 1 lb ground pork
  • 1 tbsp maple syrup
  • 1 tsp sea salt
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1/2 tsp sage
  • 1/2 tsp thyme
  • 1/4 tsp mace
  • 1 tbsp coconut oil, melted
Potatoes
  • 1 purple or orange sweet potato, sliced
  • 1 tbsp coconut oil, melted
  • 1/2 tsp sea salt
  • 1/2 tsp oregano
  • 1/2 tsp garlic powder
Brussels Sprouts
  • 5-6 Brussels sprouts, sliced
  • 2 tsp coconut oil, melted
  • 1/2 tsp sea salt
  • 1/2 tsp garlic powder

How to cook Breakfast Sliders

For the Sausage
  1. Combine pork and all seasonings in a mixing bowl. “Knead” together.
  2. Roll pork into 1 1/2-2” balls then flatten to form patties.
  3. Grease a skillet (cast iron or ceramic) with the oil.
  4. Cook the patties over med-high heat until done through, approx 5 minutes per side.
For the Potatoes and Brussels Sprouts
  1. Preheat oven to 350 degrees.
  2. Toss the sweet potatoes with their oil and seasonings.
  3. Toss the Brussels sprouts with their oil and seasonings.
  4. Line a large baking sheet with parchment paper. Place the potatoes and Brussels sprouts on the baking sheet.
  5. Bake for approx 20-25 minutes until tender and beginning to crisp.
