I’m all about getting your greens in at each meal of the day, and this is a simple way to get it done. These Brussels Sprouts cook up with a great crisp that’s almost chip-like, so it kinda feels like like you’re cheating. Perfect for the kiddo’s!
Now let’s look at those sweet potatoes. Yep, they’re purple. And this little breakfast wasn’t gonna happen until I found these beauties at my local Sprouts Farmers Market! I don’t see them often so when I do, I snatch ‘em up right away. They’re more dense and woodsy than their orange counterpart, but still just sweet enough to play nicely with the savory notes of the sausage and Brussels sprouts.
And as for the sausage, it really couldn’t be more simple. Ground pork, a little maple syrup and some seasonings, and bingo….you got yourself some sausage! I like to prep a batch for the week and grab it as needed, whether with these sliders or alongside some avocado toast, it’s a great AIP substitute for the classic breakfast patty!
