“And in the morning….I’m makin’ waffles!” . To be fair, this line MUST be said in your best “Donkey” voice, straight outta Shrek. I think Donkey would appreciate this hearty take on the humble waffle…my husband sure did! Who, by the way, can pretty much recreate Shrek as a one-man show in case you’re wondering.

I’m typically on team '“sweet” when it comes to waffles, but this one has a little bit of the best of both worlds - sweet AND savory. I was looking for a way to get some greens and proteins in as sort of a sneak attack, because let’s face it, not everyone wants turkey and greens for breakfast! And if it could be portable, well then that’s just a big ol’ plus. And if it could be meal-prepped, then that’s an extra big ol’ plus that makes me super happy!

For this recipe, the turkey sausage makes more than what the waffles call for. Unless you double your batch of batter, then add all the turkey sausage you want! This is what I ended up doing since I used it as a meal prep for two people this week (a regular batch of batter gives you 3 large waffles, doubling gives you 6).

But, if you decide you don’t want to double the batter, then stick the extra turkey sausage back for some breakfast tacos, salad topping or a fritatta later in the week!

TIP: While these are cooking, you will likely notice steam rising from the waffle maker toward the end of the cook cycle. This is ok! I let mine cook for at least 6 minutes before I lift the lid to check on it. When it’s golden brown, it’s done!

An AIP friendly, hearty breakfast classic that's perfect for meal prepping!


  • 1 cup cassava flour
  • 3/4 cup tigernut flour
  • 1/4 cup arrowroot flour
  • 1 tsp baking soda
  • 3 tbsp coconut oil, melted
  • 2 tbsp maple syrup
  • 1 1/4-1 1/2 cup full fat coconut milk
  • 1 cup turkey sausage (below)
  • 2 green onion, sliced thin
  • 3/4-1 cup spinach, chopped
Turkey Sausage
  • 1 lb ground turkey
  • 1/2 - 1 tsp sea salt
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried parsley
  • 1 tsp dried oregano
  • 1 tsp marjoram
  • 2 tsp sage


How to cook Sweet & Savory Grain Free Waffles

For the Waffles
  1. Sift all dry ingredients into a mixing bowl.
  2. Add wet ingredients and combine thoroughly. The batter will be thick, but may be thinned out a bit with coconut milk. Add slowly to ensure it doesn't become too thin.
  3. Add the turkey sausage, onion and spinach. Combine thoroughly.
  4. Scoop approx 3/4 cup of batter into your waffle iron (more or less depending on your iron), and press out with the back of a spoon to fill the iron. You want all the little squares covered but not overflowing the edge.
  5. Use the manufacturers instructions for baking your waffles—mine has a light that turns off to let me know when it’s done. I find that around 7-8 minutes works well for my iron!
For the Turkey
  1. Combine the ground turkey with the seasonings.
  2. Cook on the stove top until turkey is done through and crumbled.
