I’m all about the easy meal prep, and lately it’s been my main focus. We’ve made a few transitions as a family and it’s made me shift more toward prep and away (slightly!) from recipe development, but in this season that’s what works best for us!
Knowing your season is one of the things that keeps any lifestyle/ dietary change sustainable. You’ve gotta go-with-the-flow, while still doing what you know works for you!
Make this recipe a full sheet pan dinner by giving it it’s own sheet pan (covered with parchment paper), and cooking at 350 degrees until tender and it begins to toast slightly!
