I’m all about the easy meal prep, and lately it’s been my main focus. We’ve made a few transitions as a family and it’s made me shift more toward prep and away (slightly!) from recipe development, but in this season that’s what works best for us!

Make this recipe a full sheet pan dinner by giving it it’s own sheet pan (covered with parchment paper), and cooking at 350 degrees until tender and it begins to toast slightly!

Shrimp & Chicken Paradise Bowl

A zesty, sweet sheet pan meal that's perfect for meal prep!

ingredients:

Shrimp, Chicken & Vegetables
  • 2 chicken breasts, cubed
  • 3/4-1 lb shrimp, peeled
  • 2 zucchini, halved and sliced
  • 1 carrot, ribboned
  • 1/2 cup mushrooms, sliced (optional)
  • 1/2 small white onion, roughly chopped
  • 3/4 cup pineapple chunks
  • 2 1/2 tsp sea salt
  • 1 1/2 tsp garlic powder
  • 1 1/2 tsp onion powder
  • 1/4 tsp turmeric
  • 1 tsp dried parsley
  • 3 tbsp olive oil, divided
Cilantro-Lime Cauliflower Rice
  • 1 head cauliflower
  • 2 tbsp Avocado or Olive Oil
  • 1 head Cauliflower
  • 4 green onions, chopped
  • 2/3 cup Cilantro
  • 4 minced garlic cloves
  • Juice of 1 lime
  • 1 tsp Sea Salt
  • 1 1/2 tsp Garlic Powder
  • 1 tsp Onion Powder
Avocado Lime Sauce
  • 1 large avocado
  • 1/4 white onion, roughly chopped
  • 1/2 cup fresh cilantro, roughly chopped
  • 3 garlic cloves, minced
  • 1 tbsp coconut cream (optional, for more “creaminess”)
  • 3 tbsp lime juice
  • 5 tbsp filtered water
  • 1/2-1 tsp sea salt

How to cook Shrimp & Chicken Paradise Bowl

For the Shrimp, Chicken & Vegetables
  1. Preheat oven to 400 degrees. Line a sheet pan with parchment paper.
  2. Combine the chicken and shrimp in a bowl. Add 2 tbsp olive oil, 2 tsp sea salt, 1 tsp garlic powder, 1 tsp onion powder, the turmeric and the dried parsley.
  3. In a separate bowl, combine the vegetables and the remaining seasonings.
  4. Toss, then stir in the pineapples.
  5. Pour the meats and vegetables/ pineapple onto the sheet pan.
  6. Bake for 25-30 minutes until chicken is done through.
  7. While cooking, make the cauliflower rice and sauce.
  8. Upon serving, dish over the cauliflower rice and top with the avocado lime sauce.
For the Cauliflower Rice
  1. Warm 1 tbsp of the oil in a skillet. Add the green onions, and cook until fragrant.
  2. Add the minced garlic and cook until fragrant.
  3. Add the remaining oil, then add cauliflower and all spices. Stir well to combine.
  4. Cover and cook, stirring frequently, until desired doneness is reached.
  5. Stir in the lime juice and Cilantro at the end, and combine well.
For the Avocado Lime Sauce
  1.  Combine all ingredients in a blender and process until smooth.
