Back to those carrots; I used rainbow carrots here just because I think they’re pretty! You can use any variety you’d like :)

Carrot Fries
  • 8 medium sized carrots, halved and then quartered
  • 2 tbsp extra virgin olive oil
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Sea Salt
  • 1 tsp dried parsley
  • Fresh Parsley for garnish
Avocado Pesto Dipping Sauce
  • 1 avocado
  • 1 cup chopped parsley
  • 1 cup basil
  • 4 garlic cloves, minced
  • 2 tbsp nutritional yeast
  • 1 tsp sea salt
  • 2-3 tbsp fresh lemon juice to taste
  • 2-3 tbsp water


How to cook Carrot Fries with Avocado Pesto Dipping Sauce

For the Carrot Fries
  1. Preheat oven to 425 degrees.
  2. Line a sheetpan with parchment paper.
  3. Slice the carrots, then toss with the olive oil and seasonings.
  4. Spread the carrot fries out so that there is space in between.
  5. Bake 20-25 minutes, turning them about halfway through.
  6. Garnish with fresh parsley upon serving.
For the Dipping Sauce
  1. Combine all ingredients in a food processor and process until smooth
