There are two things I will always remember about summer as a child: popsicles and limeades.

You know those popsicles that come in a plastic tube that you squeeze from the bottom, pushing the delicious little flavored ice out the top? My niece and I would enjoy 3 of 4 of those a day. “Girls get outside with those!” is almost always the marching orders that would come with those things. No bother to us, we loved it outside!

Next to those popsicles, our other favorite summer treat was a strawberrry limeade from our local Sonic. We’d ride our bikes in the hot Texas sun alllll the way to Sonic just to enjoy one of those frosty, sweet cups of goodness. The things we did in the 80’s…no Netflix, no cell-phones….just the outdoors to keep us occupied!

And as great as being outside was, both of the treats we enjoyed with it we’re packed with sugar! So here’s a way to enjoy both of my favorite summer treats in a much more healthy way. Outside is optional, though I highly recommend it!

Strawberry Limeade Ice Pops

ingredients:

  • 2 cups coconut water
  • 1 1/2 cups whole strawberries
  • 2 tbsp key lime juice
  • 3-4 tbsp raw honey

instructions:

How to cook Strawberry Limeade Ice Pops

  1. Slice two of the berries and set aside.
  2. Combine remaining ingredients in a blender and process until well combined.
  3. Pour into a popsicle mold. Drop a few strawberry slices into each mold.
  4. Cover with the lid, insert the popsicle sticks and freeze overnight.
