You guys, summer is WINNING with this zesty burger! Chimichurri is one of my favorite sauces—it’s vibrant, has a little kick, and is so versatile…I’ve used it on everything from pizza to scallops to zoodles! We added a bit of avocado here to give it just a little creaminess. Because creamy is always better!

And let’s talk about those sweet potato “buns”. Oh.My.Goodness. Is there anything better than a grilled sweet potato, seasoned with just a bit of sea salt and garlic? I think not…except maybe when it’s covered in chimichurri!

Once all your pieces are grilled and ready, stack your burgers up high! I layered mine like:

  • Bottom “bun”

  • Avocado chimichurri

  • Burger

  • Grilled onion

  • Avocado slices

  • TONS of greens!

  • More chimichurri

  • Top “bun”

Feel free to throw in some pineapple, or AIP reintro’s tomato or cheddar cheese for variety!

Avocado Chimichurri Burger

A zesty and better-for-you spin on the classic grilled burger!


Avocado Chimichurri Sauce
  • 1/2 cup fresh Parsley
  • 1 cup fresh Cilantro
  • 2 green onions
  • 3 garlic cloves
  • 1 small avocado
  • 1/4 cup lemon juice
  • 1/2 cup olive oil
  • 1/4 cup water
  • 1/2 tsp sea salt (or to taste)
  • 1 lb hamburger
  • 1/2 tsp sea salt
  • 1 tsp garlic
  • 2 tbsp Advocado Chimichurri sauce
Sweet Potato Buns and Onions
  • 1 large sweet potato, sliced into 1/4 inch pieces
  • 1/2 purple onion, sliced into 1/4 inch pieces
  • 1 tbsp coconut oil, melted
  • 1/2 tsp sea salt
  • 1 tsp garlic


How to cook Avocado Chimichurri Burger

For the Avocado Chimichurri Sauce
  1. Combine all ingredients in a food processor or blender.
  2. Process until smooth.
For the Hamburgers
  1. Combine all ingredients, and form meat into 1/2-1 inch patties.
  2. Grill on each side approx 5 minutes, until done through.
For the Sweet Potatoes and Onion
  1. Brush the sweet potato and onion slices with coconut oil.
  2. Sprinkle the sweet potatoes on both sides with the sea salt and garlic.
  3. Grill for approx 5-7 minutes until the potatoes and onion are soft and begin to "char", turning the sweet potatoes halfway.
