I’m of the humble opinion that pesto can do no wrong. And neither can cauliflower…or bacon! So all of three of them together makes me one happy lady, especially when it pulls together in a snap!

This pesto is nut and dairy free so it’s elimination phase AIP compliant. I usually prep a double batch when I make it so I can use it for multiple recipes throughout the week! When adding it in this dish, add just enough to really coat the cauliflower florets well. You don’t want so much that a large amount “pools” at the bottom of the mixing bowl…no pesto wasted!

Serve alongside your favorite protein, or enjoy it on it’s own!

Pesto & Bacon Roasted Cauliflower

  • 1 head cauliflower, cut into florets
  • 1/2 tsp sea salt
  • 1 tsp garlic powder
  • 4 strips uncured bacon, cut into small pieces
  • Pesto (below)
  • Fresh parsley for garnish
  • 2 cups fresh basil
  • 1 cup fresh parsley
  • 2 large garlic cloves, minced
  • 1/8 cup lemon juice
  • 1/4 cup Olive Oil
  • 1/2 tsp sea salt
  • 2 tbsp Nutritional Yeast
  • 5 tbsp water


How to cook Pesto & Bacon Roasted Cauliflower

For the Cauliflower
  1. Toss the cauliflower in the salt and garlic.
  2. Pour the pesto over the cauliflower and toss.
  3. Line a baking sheet with parchment paper. Place the cauliflower on the baking sheet, leaving any remaining pesto behind.
  4. Top the cauliflower with the bacon, and place the baking sheet in the oven.
  5. Bake 20 minutes or until the cauliflower is soft and the bacon is crisp.
  6. Garnish with fresh parsley upon serving.
For the Pesto
  1. Combine all pesto ingredients in a food processor. Process on high until smooth.
