Just when I thought I had done pretty much everything possible with cauliflower…this! This is basically a side dish that can double as a main dish, and the flavors are out of this world.

Plus it’s so versatile…you can play with whatever combination of spices and toppings you want! I used turmeric, just for a pop of color but the earthy, smoky flavor it brought was fantastic.

Be sure to grab any cauliflower pieces that break away from the steak, and spice-’em-up too! No cauliflower left behind :)

Cauliflower Steak with Avocado Pesto

Cauliflower Steaks
  • 1 head cauliflower, cut into 1-1 1/2” steaks
  • 4 strips uncured bacon
  • 1/2 tsp sea salt
  • 1 tsp garlic powder
  • 1/4 tsp turmeric
  • 1/2 cup fresh parsley, chopped
Avocado Pesto
  • 1 avocado
  • 1 cup chopped parsley
  • 1 cup basil
  • 4 garlic cloves, minced
  • 2 tbsp nutritional yeast
  • 1 tsp sea salt
  • 2-3 tbsp fresh lemon juice to taste
  • 4 tbsp water


For the Cauliflower Steaks
  1. Preheat oven to 500.
  2. Cook the bacon on the stove top until crisp and the fat has rendered.
  3. Remove the bacon from the pan, leaving the fat. Crumble the bacon and set aside. Add the seasonings to the fat and combine.
  4. Use a brush to coat the steaks with the fat/ seasoning mixture.
  5. Place in the oven for 20-25 minutes.
  6. Top with the avocado pesto, parsley and bacon pieces.
For the Avocado Pesto
  1. Combine all ingredients in a food processor and process until smooth.
