Avocado Tuna Salad

Avocado Tuna Salad.jpg

If I’m being honest, I’ve never been a huge canned tuna fan. Maybe it’s all those mayonnaise-drenched tuna sandwiches I used to eat growing up…but something about it used to really put me off. Even in adulthood, it’s been a tough sell! BUT…enter the avocado and a zesty little dressing, and I’m all in!

This is a great in-a-hurry salad you can toss together without sacrificing any of the nutrients (or flavor). Of course as with anything, quality is key…you want a good can of tuna! Look for wild-caught (the label actually says this now, fortunately!), packed in water. Not that I have anything against oil, but we want to be sure it’s the right kind of oil and it’s just too sketchy when it’s a canned product.

We enjoyed ours with some toasted cassava crackers but it would also be great as a lettuce wrap!
