Did I just dedicate an entire post to a single sauce? Yes. Yes I did. And I’m not even mad about it.
I absolutely love Mexican food, especially verde sauce. Of course, being AIP means the nightshades and dairy have to go, but that doesn’t stop it from being AMAZING! This version is zesty, creamy and EASY. I use it in everything from tacos to casseroles to soups!
•1/2-3/4 medium white onion, depending on size
•1 small bunch of Cilantro
•1 medium-large avocado
•3 1/2 tbsp lime juice
•1/2 can full fat coconut cream
•1 1/2 tsp sea salt
•1 tsp garlic powder
Combine all ingredients in a blender and process until smooth.
Keeps in the refrigerator for a couple of days, but best when used fresh.
