Avocado & Crab Salad

Avocado & Crab Salad.jpg

It's an unspoken goal of mine to incorporate more seafood into my diet. Not that I'm suddenly not eating chicken or beef...I just know I need more variety and let's face it, seafood is pretty darn nutrient rich! So I'm setting out to find easy ways to make that happen.

Hence, this salad! Such an easy and flavorful little dish that hits all my checkpoints: healthy fats, protein, smart carbs, leafy greens and delicious! It would work atop any green, but I used baby spinach and arugula. And I didn't put an "amount" of greens in the recipe because you can add as much or as little as you'd like!

•8 oz lump crab
•1 large avocado, diced
•1/4 of a red onion, diced
•1/2 cup Cilantro, chopped
•Juice of 1 large lime
•1/2 tbsp olive oil
•1/4 tsp sea salt
•1/4 tsp garlic powder
•Greens for serving

  1. In a small bowl, mix the lime juice, olive oil and seasoning together to make a dressing.
  2. In a large bowl, combine cilantro, onion and dressing.
  3. Stir in the crab.
  4. Stir in the avocado.
  5. Serve over greens of your choice!
