Sweet Basil Lime Chicken
I will grill until the very last bit of summer is gone…and by me, I mean my husband. He is the grill master around here! But I cover the marinades, and this is one of my favorite. It’s sweet and tangy and the honey in it allows for that just-perfect, caramelized crispiness that I love! And it’s so, so, so easy.
We served ours with a green salad and grilled sweet potatoes, but let’s face it, grilled chicken goes with just about anything!
•4 large chicken thighs, skin on
•1/2 tsp sea salt
•1 tsp garlic powder
•Juice of 2 limes
•1 cup fresh basil
•1 1/2 tbsp raw honey
Season the chicken with the sea salt and garlic powder. Place it in a deep dish.
Combine remaining ingredients in a food processor or blender and process well.
Brush the marinade over both sides of the chicken, and pour remaining juices in the dish along with it. Marinate in the fridge for an hour (or longer).
Grill until done!
