Cool As A Cucumber Creamy Summer Soup
A fun weeknight appetizer that can easily be made as a main course! We served this chilled soup with Avocado Relish, but some crumbled bacon bits or diced ham would be a great addition and bring it into full-on "meal" territory. I’m definitely adding this one to my chilled soup rotation!
•3 cucumbers halved, seeded and chopped
•2 green onions, roughly chopped
•1/4 cup fresh parsley
•1 tbsp fresh baby dill
•1 can full-fat coconut cream
•1 tbsp fresh lemon juice
•1 tbsp Virgin Olive Oil
•1 tsp sea salt
•2 tsp garlic powder
- Combine all ingredients in a blender and process until smooth.
- Pour into serving bowls and chill in the fridge until cold.
•1/4 cup red onion, diced
•1/4 cup fresh parsley, chopped
•3-4 grape tomatoes (yellow and red), diced
•1 avocado, diced
•1/4 tsp sea salt
•1/2 tsp garlic powder
- Combine all ingredients and stir.
- Top soup with as much as you’d like!
