Very Cherry Cookies
....Or as my husband called them, Baby-Jesus-Deluxe-Cookies. I wasn’t quite sure about that one 😂. But I’m not gonna lie...these are pretty darn insane.
My secret ingredient for these is actually pineapple! Something about it playing against the cherry just works, but doesn't overpower the flavor.
•6 Medjool Dates
•1/3 cup Finely ground Coconut Flakes (I pulse coconut flakes in a blender a few times to get a fine texture).
•3/4 cup Coconut Butter, melted
•1/4 cup (heaping) fresh pineapple, crushed
•5 cherries, pitted plus 5-6 more for topping
•5 tbsp Tigernut Flour
•2 tbsp cassava Flour
•1/2 tsp baking soda
- Preheat oven to 350
- Boil the dates in about 2 inches of water until soft. Remove pits from the dates.
- Add all ingredients to a food processor and process until a smooth dough forms. It will not be like traditional cookie dough.
- Line a cookie sheet with a nonstick mat or parchment paper. Use a cookie scoop to scoop out the cookie dough, and place each scoop onto the cookie sheet about 2 inches apart. Use fingers to press the dough into a cookie shape.
- Top each with a half a cherry, and bake for 16-18 minutes until brown and “springy” to touch.
