Dairy-free Ambrosia Salad
Ambrosia Fruit Salad! I've been missing my Granamama's pink ambrosia salad, so I'm putting my much better-for-you version on repeat! All the ambrosia flavor without the processed, hydrogenated stuff that comes with traditional whipped cream (you know what I'm talking about!). Enjoy this at your next summer cook out!
•6 large strawberries, sliced
•1 cup blueberries
•1/2 cup blackberries
•1/2 cup pineapple, cut into small cubes
•1 can coconut cream (not the watery part)
•1 tbsp honey
•1/4 cup large coconut flakes
1. Whip the coconut cream and honey together.
2. Combine all ingredients in a bowl and chill for about a half hour. Serve cold!
