I may be a little too excited about this Matcha Fudge...simple, smooth and rich but still beneficial to your body! Matcha is full of powerful antioxidants, supports the immune system, has detoxifying properties, and has even been shown to boost memory and concentration. Yes, please!
For this recipe, if you are unsure about Matcha or if you aren't a huge Matcha fan (yet), use 1 tbsp of Matcha powder instead of 2. I used 2 because I love me some Matcha 🍵😄😍
•1-2 Tbsp Matcha Powder (1 tbsp if you like less Matcha flavor)
•1/2 cup coconut cream
•1 cup coconut butter
•1/2 cup honey
•1 tsp coconut sugar
•Finely shredded coconut for garnish
- To start, you will need to melt the coconut butter in it's container to get it out (most likely a glass jar). Once you have the melted coconut butter, combine all ingredients in a food processor and process on low until a nice thick paste forms.
- Line a square, glass baking dish with wax paper or plastic wrap. I actually used two smaller Pyrex containers about 4x6 in size. Pour the mixture into the container, and place in the fridge for about an hour. I find the longer it refrigerates, the better!
- Once firm, remove from fridge and pop the fudge out by pulling on the wax paper/ plastic wrap. I trimmed the outer layers of mine off to give it that classic Fudge appearance.
- Cut into squares, then top with the shredded coconut! Yum!
