Basil Meatballs with White Mushroom Gravy

This was SO GOOD served alongside roasted broccoli and garlic! I could drink that gravy and not feel bad about it at all! It's delicate and flavorful, and pairs well with the hearty meatballs. This is one of those dishes that’s perfect for prepping and eating throughout the week!

MEATBALLS
•1 lb pastured ground beef
•1 lb pastured ground pork
•1/4 cup fresh basil, chopped
•1 tsp Sea Salt
•2 tsp garlic powder
•2 tsp onion powder

  1. Preheat oven to 420.
  2. Combine all ingredients
  3. Form balls approx 1.5 inches in diameter.
  4. Bake for 15-20 minutes or until done through.

MUSHROOM GRAVY
•3 cups beef bone broth
•1 cup full fat coconut milk
•1/4 cup white onion, roughly chopped
•2 cups sliced mushrooms
•4 strips Uncured Bacon, roughly chopped
•1 tsp sea salt
•2 tsp garlic powder
•2 tsp onion powder
•1 tsp Oregano
•1 tsp sage
•2 tbsp cassava flour

 

  1. Combine all ingredients except flour in an instant pot. Close lid and cook to Manual for 15 minutes. Quick release pressure at end of cycle.
  2. Use an immersion blender or high powered blender to process the gravy until smooth.
  3. Add the flour and process until combined. This will thicken the gravy a bit. Will make enough to last all week...add a bit more bone broth to make a great soup!
