Blueberry Acai Mojito Mocktail
I love a crisp, fruity mocktail! And, we re pretty low-key on New Years Eve, so this easy to assemble party drink is right on queue.
Traditional cocktails/ mocktails call for club soda, but I love using Topo Chico. It has a little more effervescence, not to mention a mineral profile that contains sodium, magnesium, potassium and manganese. In fact we tend to keep Topo Chico on hand around the house all the time we love it so much!
For this recipe, feel free to adjust the blueberry, mint or honey ratios to your preferred taste.
•Juice of 1/2 a small lime
•10 mint leaves, plus more for garnish
•8-10 blueberries, plus more for garnish
•1/2 cup Acai puree
•1/2 tbsp honey
•Topo Chico or Club Soda
In a mason jar, gently muddle together the lime juice and mint leaves.
Add the blueberries, acai and honey and place the lid on the jar. Shake vigorously.
Fill a serving glass about 1/4 full with ice.
Pour the mocktail mix over the ice, and fill the remainder of the glass with Topo Chico or Club Soda.
Garnish with Mint and Blueberries.
