Plantain Poppers

This is what happens when you have two yellow plantains and want more than just a tostone! Listen I love tostones as much as the next girl, but sometimes you just want something a little more hearty. This was the solution! Add just a little more seasoning if you want more “heat”!

We served them with some guacamole for dipping, but they’d be great with a dairy free ranch too!


•1 lb ground beef

•1/4 tsp sea salt

•1/4 tsp garlic powder



•2 yellow plantains, peeled and chopped

•1 tbsp arrowroot flour

•1 1/2 tsp sea salt

•2 tsp garlic powder

•2 tsp onion powder

•1/2 cup pre-cooked ground bison or beef

•1 green onion, chopped

•2 tbsp cilantro, chopped

•Cooking fat (avocado or coconut oil).


  1. Prepare ground bison or beef by seasoning with the sea salt and garlic powder, then browning until done. Drain the fat, and set aside. This will make enough for you to have leftovers for multiple dishes!

  2. Place the plantain, flour and seasonings in a food processor and blend on high until a smooth paste forms.

  3. Fold in the meat, onion and cilantro.

  4. Fill a skillet with about 1/4 inch of cooking fat. Heat to medium high but not to it’s smoking point.

  5. Use a cookie scoop to scoop out portions of popper mixture, flattening each slightly to form the popper.

  6. Carefully drop into the hot cooking fat, and cook on each side approx 5 minutes until nice and brown.

  7. Serve with guacamole!
