Honey Cinnamon Tapioca Breakfast Porridge
There’s something just soul-satisfying about a warm bowl of “oatmeal” for breakfast. But, since I don’t do grain (I see you, oats), I used Tapioca Granules for this nostalgia-inducing bowl of goodness! Plus, Tapioca is a great source of both iron and copper, PERFECT for this gal with autoimmune-induced anemia . Tapioca is one of the higher carb foods that I will occasionally indulge in, so I make sure to balance it out with healthy fats (coconut products) and proteins like Vital Proteins Collagen Peptides.
•3 cups full fat coconut milk
•1/2 cup Tapioca Granules
•1 1/2 tbsp raw honey
•1/2 tsp vanilla
•Pinch of Cinnamon (plus a bit to sprinkle on top as garnish)
•1 scoop Vital Proteins Collagen Peptides
- Bring coconut milk to a boil, then reduce to low-medium.
- Stir in Tapioca Granules, and cook for 20 minutes stirring frequently, until granules are soft.
- Add honey, vanilla, cinnamon and collagen. Mix well and remove from heat.
- Pour into a serving bowl and top with toasted coconut, raisins and a sprinkle of cinnamon!
