There’s something just soul-satisfying about a warm bowl of “oatmeal” for breakfast. But, since I don’t do grain (I see you, oats), I used Tapioca Granules for this nostalgia-inducing bowl of goodness! Plus, Tapioca is a great source of both iron and copper, PERFECT for this gal with autoimmune-induced anemia . Tapioca is one of the higher carb foods that I will occasionally indulge in, so I make sure to balance it out with healthy fats (coconut products) and proteins like Vital Proteins Collagen Peptides. 

•3 cups full fat coconut milk
•1/2 cup Tapioca Granules
•1 1/2 tbsp raw honey
•1/2 tsp vanilla
•Pinch of Cinnamon (plus a bit to sprinkle on top as garnish)
•1 scoop Vital Proteins Collagen Peptides

  1. Bring coconut milk to a boil, then reduce to low-medium.
  2. Stir in Tapioca Granules, and cook for 20 minutes stirring frequently, until granules are soft.
  3. Add honey, vanilla, cinnamon and collagen. Mix well and remove from heat.
  4. Pour into a serving bowl and top with toasted coconut, raisins and a sprinkle of cinnamon!
