Carrot Cake Collagen Bars
Well these were a happy accident. I started making a medjool date crust for something else I was making, then decided, “nah”. So I was left with all this half-finished crust. What’s a penny-pinching girl who throws nothing out gonna do? Make some collagen bars! That are also full of healthy fat, of course.
I stored these in the fridge but they do great as a snack that's unrefrigerated too (they'll soften up a bit after a few hours).
•8 Medjool Dates, pitted
•1/2 cup coconut butter
•1 cup shredded coconut
•1/8 tsp Mace
•1/3 cup raisins
•1 large carrot
•1/4 cup crushed Almonds (omit for elimination phase AIP)
•Vital Proteins Collagen Peptides
- Boil the dates in approx 2 inches of water until soft
- Add all ingredients to a food processor and process until well combined. The mixture will have a crumbly texture and be very moist!
- Press into a square cake pan and refrigerate for about a half hour.
- Cut into squares and store in fridge.
