Banana Date Muffins
The perfect morning coffee companion...or mid-day snack...or desert...! I'm so happy with how the texture of these little muffins turned out. The combination of Otto's Cassava flour (click link below to buy now!) and Coconut flour is surprisingly light but compact, and still moist. The dates add just the right amount of sweet, without feeling like you're over-indulging. I'll be working on a Banana Date Loaf next, so keep your eyes peeled!
•1/4 cup + 2 tsp coconut oil
•1/8 cup honey
•1/3 cup Otto's Cassava flour
•1/2 tsp baking soda
•1/3 cup coconut flour
•1 tsp cinnamon
•1/2-3/4 large banana (depending on size), smashed
•4 Medjool Dates
- Preheat oven to 350*.
- Boil dates until soft, around 5 minutes. Remove pits.
- Combine all ingredients in a food processor and process until well mixed.
- Line a mini muffin tray with paper cups, and use a cookie scoop to fill each with batter.
- Bake for 20-25 mnts, until golden brown.
