Zesty Dairy Free Shrimp Scampi
I have been craving Scampi but can't tolerate butter (yet!), so I improvised and made this little gem! So flavorful and robust, I didn't even miss that butter :)
•1 lb wild-caught shrimp
•1 cup Extra Virgin Olive Oil + 3 Tbsp, divided
•5 garlic cloves, minced
•2 green onion, finely sliced
•3 tbsp Parsley, plus a bit for garnish
•2 tbsp fresh lemon juice
•1-2 tsp sea salt to taste
•2 tsp garlic powder
•3 large zucchini, spiral sliced
- Add 3 tbsp olive oil to a skillet and bring to medium heat.
- Add the minced garlic, onions and Shrimp and cook until Shrimp are pink and firm.
- Add remaining ingredients and cook for approx 10 minutes, stirring frequently.
- Serve hot over Zucchini Noodles.
