Zesty Dairy Free Shrimp Scampi

I have been craving Scampi but can't tolerate butter (yet!), so I improvised and made this little gem! So flavorful and robust, I didn't even miss that butter :)

•1 lb wild-caught shrimp

•1 cup Extra Virgin Olive Oil + 3 Tbsp, divided

•5 garlic cloves, minced

•2 green onion, finely sliced

•3 tbsp Parsley, plus a bit for garnish

•2 tbsp fresh lemon juice

•1-2 tsp sea salt to taste

•2 tsp garlic powder

•3 large zucchini, spiral sliced

 

  1. Add 3 tbsp olive oil to a skillet and bring to medium heat. 
  2. Add the minced garlic, onions and Shrimp and cook until Shrimp are pink and firm. 
  3. Add remaining ingredients and cook for approx 10 minutes, stirring frequently.
  4. Serve hot over Zucchini Noodles.
