Golden Mushroom Soup


I'm not sure what else to call this, but look at that BEAUTIFUL color! Turmeric gives this creamy soup that brilliant golden hue. After our fam had a few tummy rumbles in the house, we made a batch of this gut-healing soup. The anti-inflammatory benefits in turmeric are perfect for tummy-taming! And by the way, did you know that onions also have anti-inflammatory properties, as do mushrooms? Both of which you’ll find inside!

•1 small white onion, roughly chopped
•1 cup white mushrooms, sliced
•2 tbsp coconut oil
•4 cups bone broth
•1/2 tsp sea salt
•1 tsp garlic powder
•1 tsp onion powder
•1 tsp Turmeric
•a pinch of Ginger
•1 cup coconut milk 

  1. Place coconut oil in Instant Pot and select Sauté on low. Once melted, add the onion and cook until onions are soft. Be sure to stir often so they don't stick!

  2. Add mushrooms and Sauté for about 2 minutes, then add remaining ingredients EXCEPT coconut milk.

  3. Cancel the Sauté function. Close the lid, choose the Manual function and cook for 10 mnts. Quick release pressure to when time is up.

  4. Pour the coconut milk into a high powered blender. Pour soup mixture into the blender (you may have to do this in two batches depending on the size of your blender). Blend until you have a smooth, creamy texture
