Baked Peaches and Cream

Simple, saucy-sweet...delish!!! Like a crustless peach pie with whipped cream, but not.


Sweet cream

•1 can full fat coconut cream (cream only, not the water)
•1 tbsp raw honey
•1 tsp vanilla

1️. Combine all ingredients in a bowl and mix well with an electric mixer.
. Place in refrigerator and allow to chill while you prepare the peaches.


•2 ripe, organic peaches
•2 tsp honey each, divided into 1/2 tsp
•1 tsp cinnamon
•1/2 tbsp coconut oil

1️. Preheat oven to 350.
. Slice each peach in half and remove the pit. Use a small spoon to scrape out the tough part left by the pit. Cut a small piece off the back of each slice, creating a flat surface so it will sit upright.
. Rub 1/2 tsp honey across each peach halve. It's ok for some of the honey to gather in the center where the pit was.
. Sprinkle the cinnamon across the peaches.
In an iron skillet, melt the coconut oil. When melted, remove from heat and add the peaches. Place the skillet in the oven and bake for 30-35 minutes.
. Remove from oven, place the peaches on a serving plate, and pop a dollop of the sweet cream in the center. The more, the better!
