Tropical Blueberry Mint Mocktail

Need a non-alcoholic way to ring in the New Year? This refined sugar free mocktail is how we’ll be celebrating! It’s nice to resurrect some summer flavor on one of the coldest nights of the year (so far!), and with a nice little bite of mint for some extra zip. How will you kick off 2018? HAPPY NEW YEAR!

•1/2 cup fresh blueberries
•1/2-1 tbsp raw honey, to your preferred sweetness
•6 small pineapple chunks
•4-6 mint leaves depending on size
•Sparkling Mineral Water

 

  1. Puree the blueberries and honey to your preferred texture (I like the little Fruits pieces in my drink 😀).
  2. In a bowl, muddle the mint and pineapple until you can smell the mint juices.
  3. Transfer to your cocktail glasses (2), then scoop 2 tbsp of the blueberry mixture into each glass.
  4. Fill the glass with cold sparkling mineral water (I use Topo Chico), and garnish with blueberries and pineapple!
