Banana Date Bread

I’ve been playing around with this one and I have to say, I’m happy with this spin on my banana date muffin recipe!  I love good old-fashioned banana bread, and this gluten, grain, nut and egg free version hits the spot. Cassava and Coconut flours work together to make a dense but moist texture, and the cinnamon scent while it’s baking is drool-worthy! Would be great swerved warm with a bit of Ghee (if you can tolerate dairy)!

•1/2 cup + 4 tbsp Coconut Oil
•1/4 cup + 1 tbsp raw honey
•2/3 cup Otto’s Cassava Flour
•1 tsp Baking Soda
•2/3 cup Coconut Flour
•2 tsp Cinnamon
•4 tbsp unsweetened Apple Sauce
•1 1/2 large Bananas
•8 Medjool Dates

 

  1. Preheat oven to 350*
  2. Boil dates and remove pits.
  3. Combine all ingredients in a food processor and process until well mixed.
  4. Lightly grease a bread pan, and scoop the batter into the pan. Press with fingers until nice and even.
  5. Bake for 40-45 mnts
