Chicken Zoodle Soup

This hearty bowl is deliciously perfect for those cooler nights, especially since we’re in “strep season” here in North Texas. Tummy-loving and soul-soothing, this grain, gluten and dairy free chicken soup is just what the Dr. ordered.


•2 chicken breasts, pre-cooked and shredded
•Broth (below)
•1 tsp sea salt
•1/2 tsp Oregano
•1 tsp Onion Powder
•1 carrot, shredded
•1 celery stalk, chopped
•1/2 white onion, slivered
•2 Zucchini, spiral sliced

  1. Combine all ingredients in an Instant Pot.
  2. Cook on Manual for 8 minutes.
  3. Quick release pressure at end.



•4 garlic cloves, minced
•1/2 white onion, chopped
•4 cups Bone Broth
•4 strips uncured bacon
•2 tbsp Olive Oil


  1. Combine all ingredients except Olive Oil in an Instant Pot and cook on Manual for 12 minutes.
  2. Quick release pressure when done.
  3. Add Olive Oil, then use an immersion blender or high powered blender to process broth until smooth.
