Chicken Zoodle Soup
This hearty bowl is deliciously perfect for those cooler nights, especially since we’re in “strep season” here in North Texas. Tummy-loving and soul-soothing, this grain, gluten and dairy free chicken soup is just what the Dr. ordered.
•2 chicken breasts, pre-cooked and shredded
•1 tsp sea salt
•1/2 tsp Oregano
•1 tsp Onion Powder
•1 carrot, shredded
•1 celery stalk, chopped
•1/2 white onion, slivered
•2 Zucchini, spiral sliced
- Combine all ingredients in an Instant Pot.
- Cook on Manual for 8 minutes.
- Quick release pressure at end.
•4 garlic cloves, minced
•1/2 white onion, chopped
•4 cups Bone Broth
•4 strips uncured bacon
•2 tbsp Olive Oil
- Combine all ingredients except Olive Oil in an Instant Pot and cook on Manual for 12 minutes.
- Quick release pressure when done.
- Add Olive Oil, then use an immersion blender or high powered blender to process broth until smooth.
